tips to get kids to eat left ovrs

If you know in advance you are going to have just a little bit of left overs why not just go ahead and package it in a freezer sized container for the next time you have that same meal, then you can just mix that in with the other food and no one will ever know...casseroles are your friend people!

Tonight for dinner i made what is possibly the grossest sounding casserole ever:

left over mac & cheese (home made macncheese yumm)
left over spaghetti sauce from weeks ago that i had frozen in individual baggies with about 1 and a half cups of sauce per baggie)
left over squash casserole
left over chef boy r dee raviolios

Now most of you were probably feeling me until i got to the chef BRD LOL but hear me out...it's tomato based, the sauce is tomato based and it's slathered in cheese...not likely to notice it - plus the kid likes it.

dumped all of that uncerimoniously into a baking dish, sort of mixed it up but not really LOL poured the spaghetti sauce over top, covered (and i mean COVERED) it in some cheese, sprinkled it with garlic powder and oregano and ground some salt over the top (my daughter likes to SEE the coarse salt on her food....)

baked it at 350 for like 35 minutes since it was all direct from the fridge LOL - it was great! well all but the raviolios - i ate around them but she didn't! :)

She even ate squash and onions which she won't eat normally....got her to eat some meat which she usually won't eat....

so it was a winner!

for some reason when i cook i think that 9 people are joining me for each meal so i cook HUGE amounts - even my single recipes are monsters!!

think it's coming from being my grandfathers granddaughter!

Here are a few thoughts of mine on left overs and how to make them great again so they aren't really "left overs" but "meal starters"

Things to do and an explanation...

First: an explanation.... i have become much more lazy and less enthusiastic about saving money lately and it shows. I've gone from orders where i paid 10.00 and walked out with 100.00 worth to orders where i pay 50 and have only saved 15.00...

I know how to save the money -I do it for my best friend every week...and i save money for myself - or i used to...

But here is my situation...i'm depressed and frustrated...

My soon to be ex husband has basically left us and has decided he wants to be single. Now he did want to come back...rather he wants me to live with him at his parents house and i'm not going to do that for multiple reasons.

So I live here with my dad near Nashville.

I am in the process of doing several things. (1) filing bankruptcy (2) starting new businesses (2 of them) (3) taking care of my children (4) Trying to clean up my dad's house and get his mess under control and (5) and MOST important...fixing my relationship with our most gracious Lord...

So I also think i've had some post partum depression going on.

But...anyway that's me :)

My dad and i have a lot of challenges in our relationship. One of them is the fact that we both stockpile but we go about it differently. I will stockpile an item but once i reach a ridiculous amount of an item i will stop. i also store my stockpiled items up and out of the way....he stores his in the kitchen floor and table and dining room table and in the chock full garage and everywhere else. kitchen counter.


If you have ever worked in a food related job (fast food or regular resturaunt or a grocery store) you learn the importance of ROTATION you also learn that if you have a stockpile. Dad doesn't do that - he buys stuff and forgets he has it and uses the new stuff first.

So anyway without further ado here is my list:

I need to start eating more at home and try to eat up some of dad's stockpile so that we have room for more food. so i'm going to do more eating out of the house...Right now though i'm craving a pizza hut pizza so bad I absolutely can't stand it so will probably be eating pizza hut within the next day or so.

This is a challenge of mine so expect me to religiously plan some menus of the next few weeks also i will still be shopping as that is part of my job now.

I must organize coupons. They are consuming me and today at publix I realized I could not find half of the coupons i needed.

So tonight i'm going through my binder i'm going to pull out all of my coupons for harris teeter tomorrow and i'm shopping from a darn list instead of wandering around!!! i'm going to pull out 20 coupons for the super doubling and that's it.

I'm going to carry just those inside with me - the big binder will likely stay at home.

This week i also must go to rite aid.

i need to get my desk area cleaned off and get my internet on the computer up and running so i can use it instead of the craptop.

I got six newspapers this week (I bought 5 - dad bought 1) but i have no inserts from last week :( so here is stuff left to do this week:

This is just a preliminary list of my grocery plans for the week. i am looking for something specific within the drugstores so i may post that info real quick too. My daughter VERY MUCH wants to swim so i have to hurry and get the prelim done.

I really would have liked to have spent more time on this since it's HT and not just around the corner. One day when i get a chance i'll explain how i figure out what i'm going to buy at the store. I really should start shopping based on a menu - id' save so much money because right now i just have such a large stockpile i just buy at random because i don't NEED anything.
